The Halo Heat surrounds food with even, radiant heat. No hot elements, fans or added humidity. Your meals stay crisp and succulent, without fear of overcooking, protein shrinkage or drying out.

If a staff member leaves the door open, the SureTemp(TM) heat recovery system makes up for any heat loss, so cooking quality is consistent. If the door is left open for more than three minutes, a buzzer sounds reminding you to close it.

The Alto Shaam 750 TH II has a digital display and a simple ON/OFF switch. The cooking temperature knob ranges from 94 degrees C to 160 degrees C, and the holding temperature knob ranges from 16 degrees C to 96 degrees C.

There’s no need for water pans, external vents or hoods.

Probes within the oven sense the temperature of the product. Once the food is cooked, the oven automatically converts from cooking mode to holding mode. Otherwise, cook your product to the time you specify. Then the holding cabinet will take over until you’re ready to serve.

Widen your menu options. The Alto Shaam 750 TH II can turn underutilised cuts of meat into succulent, tender products. One to two days of dry ageing is only one hour in the cook and hold oven.
