Awarded one of the seven Master Chef status’ by the Australian Culinary Federation, George Fouskarinis has earned this title through years of painstaking hard work to deliver consistent quality food that innovates and excites. Now in his new role catering for the SCG, Allianz Stadium as well as Perth’s WACA and Patterson Stadium, George wanted to bring this same consistent quality food to a stadium setting.
George outlines his vision. “We want to do restaurant quality food in a stadium; it’s the same as what I’d do in a 5-star hotel or top restaurant. But here we have to do it across multiple locations simultaneously.”
In Sydney, George manages 100 chefs cooking in a kitchen of 12,000sq m to provide all the fine cuisine for the dining rooms and corporate areas, whereby he must work within budget while delivering quality and consist food that limits wastage and can be expedited quickly.
