It is no secret that the food truck scene is taking the quick service concept by storm, but for Ameer El-issa he knew that a truck would not make the impact he needed for his unique bakery concept.
Determined to find an avenue to serve his mother’s Knafef recipe (a traditional dessert from Jerusalem), Ameer turned a re-purposed shipping container into a movable bakery now operating all over Sydney, Melbourne and soon the streets of Berlin and NY!
We sat down with Ameer to find out why hordes of people were flocking to Sydney’s industrial estates to chow down on his now famous dessert, plus how the Lincoln Impinger Oven means his product is cooked to perfection whilst serving up to 4,000 covers a night.
